Preparation

    Prepare the filling the night before. Wash the prunes and dry with a towel. Cut into large pieces or halves, put in a jar and fill with cognac and Madeira. Stir, cover and leave the dried fruits overnight to soften and soak in the alcohol.

    The next day, make the cream. Add vanilla sugar to the butter at room temperature and beat with a mixer.

    Add boiled condensed milk to the creamy vanilla mixture and beat until creamy.

    Pour in the cognac and mix the cream well again.

    Make caramel. Place all ingredients in a saucepan and bring to a boil, stirring constantly.

    Turn the heat to low and simmer the mixture for 15-20 minutes.

    During this time, it will thicken a little and acquire a yellowish-brown tint.

    While the caramel is cooking, assemble the cake. First, divide the cream into 5 parts.

    Remove the prunes from the jar and halve them.

    Remove the skin from the kiwi, cut each fruit into thin semicircles.

    Spread a layer of cream over the first layer of cake using a narrow spatula.

    Arrange the pieces of kiwi and prunes.

    Decorate the next cake in the same way.

    Apply cream to the last cake layer only from the bottom and place this side on top of the previous one.

    Decorate the sides of the cake with the remaining cream.

    Pour hot caramel into the middle of the cake and, so that it does not have time to harden, quickly spread over the surface.

    Leave at room temperature for 5-6 hours and then place in the refrigerator.
