In the case when there is no need to delete the entire correspondence or contact entirely, simply hide it by selecting the appropriate item (“Hide conversation”) after clicking on the item of the same name in the context menu of the Skype contact.

You can also rummage through folders on your computer or laptop, find the one you need and delete the correspondence of one contact (message) without using special methods. To do this, you will need to download the “SQLite Database Browser” program (there is a “Portable” version that does not require installation).
